Low-Fat Seafood Gumbo
Ingredients
* 3/4 cup all-purpose flour
* 2 tablespoons vegetable oil
* 2 tablespoons unsalted butter
* 2 medium onions, chopped
* 1 poblano pepper, chopped
* 2 ribs celery, finely chopped
* 5 cloves garlic, minced
* 1 (15-ounce) can whole tomatoes
* 4 cups chicken stock
* 4 cups clam juice
